I had an epiphany the other day. I am like the ying to Pioneer Woman's yang. She grew up on a golf course and was a total foodie. She then got married and moved to a ranch in the middle of nowhere. She had to learn to make hearty, down-home food and incorporate some of her former foodie style now and then. I grew up on a ranch in the middle of nowhere, eating and cooking down home, hearty food. Since "escaping" to the big city, I have been broadening my foodie horizons....oh yeah, and I now live on a golf course!
This meal from my friend Melissa is a total nod to the down home, hearty food of my youth. Yet when I first read the recipe, my "foodie sense" (kinda like spidey-sense), was sent screaming. Yet another of those recipes that the ingredients seem to be too sparse and simple to do much of anything, but those darn flavor fairies do that dance again, and it is wonderful! It is a definite staple in my menu planning.
Super easy and super flavorful....don't wait to try this gem!
Seriously Scrumptious Drunken Pork Chops
- 5-6 pork chops- bone-in or boneless, your choice
- Salt and pepper to taste
- 1 bottle of beer (The darker beer the better. I use New Belguim 1554. I would not recommend going as dark as a Guinness though.)
- 1/2 cup brown sugar
- 1/3 cup ketchup (I know, I know....but TRUST ME!)
Have your drink and eat it too!

I used Guinness beer and thought it was too strong. So then I used Fat Tire and loved it! So I think any red or dark micro brew would be great. It's an awesome recipe!

DeleteI made this recipe a few times and my family absolutely loves it! The pork turns out very tender and the sauce is so flavorful... yum! I also love how easy it is to prepare. I opted for a Guiness Dark (not the Extra Dark) and it turned out great. Thanks for a great recipe! :)

ReplyDeleteI use New Belguim 1554. I don't like it with Guinness, but any dark lager will work. If you can't find the 1554 then you could ask someone at the store to find a dark ale would work. Let me know how it goes :)

ReplyDeleteI am not a pork chop girl at all, however I bought pork chops on sale the other day. My husband is in the military and works swings so we cook and he brings the food with him. I went on pininterest today and typed in pork chops, I came across this and said hmmm this sounds like it could be good. I used a crappy beer (only beer in my house because I like the can) its called beer 30 light. haha I used it and wow it was freaking amazing I loved it and I only had about 25 minutes to cook it, instead of simmering I left it on high heat for about 10 minutes (after the pork chops were browned) I than followed your corn starch recipe but added a little more corn starch so it would thicken a little quicker. Made mashed potatoes and sent my husband on his way. Then I let the pork chops cook for another 10 minutes and made me and a friend a plate and I am in love with this recipe and the sauce tastes so amazing with the potatoes. Next time I want to try it with a dark beer. Thank you so much for posting!!

DeleteI use Gingerale all the time for this sauce insted of beer, turns out exactly the same. For a little twist, use mustard inplace of the ketchup - also incredibly delicious!

I have never tried making this with anything but beer. If you are worried about the alcohol content, because it simmers so long, the alcohol cooks out. I think the beer is essential to the flavor, though it in way way tastes like beer. You could maybe see if there is a darker non-alcoholic beer, though I can't promise it will be the same. Let me know if you try it and what you think :)
ReplyDeleteI loved the sauce. I also can see using it with chicken and beef. I especially like the fact that the only salt in the recipe comes from any in the ketchup. It is a good sauce to just keep in your head as there are only three ingredients.

ReplyDeleteI found this recipe on Pinterest too. I've never cooked with beer, and don't even like the smell of it, so I wasn't sure if I'd like it, but decided to give it a try with chicken breasts. I was expecting something like Sherry or Marsala Chicken, but it's actually closer to a bbq sauce with the ketchup. It was quite tasty, very tender, and super easy! And for those of you, like me, you can't taste the beer, but you do have to tolerate the smell a bit while it cooks. (I used an Irish ale, Smithwick's.)

ReplyDeleteAmerican beers tend to be around 12oz or 350ml.
DeleteI think using Coke would work well for those who do not want to use beer, for obvious reasons. I use Coke and ketchup in a beef recipe I have and it's absolutely delicious. The syrup used to make it dark and sweet is the key. Hope this helps!

ReplyDeleteYou can also do this with coca cola, have been doing this forever! You use 1 cup coke and one cup ketchup, stir it together and pour over the chops or chicken, in a 9 x 13 baking dish. Sprinkle brown sugar on top of the meat and bake uncovered at 350 for 30 minutes, take out and flip chops over and spoon sauce on top, put back in oven for another 15-20 minutes.

DeleteI tried it with the Shiner Bock as well which was recommended by the liquor store manager after telling him what I wanted it for since no one in my family drinks beer and I didn't have a clue. It was wonderful but I thought a 1/2 cup of brown sugar was a little much. Next time I may cut it down to a little over a 1/4 cup then decide if it needs more but still everyone enjoyed it as it was. I can't wait to try this recipe with a pork tenderloin over rice. This was truly easy and what a nice elegant meal.

DeleteI was so hopeful when trying this recipe. I followed the recipe exactly, and I am just disappointed. I must be doing something wrong...as everyone else seems to be loving this recipe. This tastes like warm beer...very gross and very strong. Perhaps I did not simmer HOT enough? I did simmer for 45 min....

ReplyDeleteJust put these in the Crock-Pot. I layered the ingredients. I also used pork steak because thats what I had on hand. Two steaks in the bottom, then sprinkled them with S & p, some brown sugar and ketsup, repeated layers until I was done then put a can of beer over it all. Will let you know how it goes!

Deleteok I went to the liquor store looking for New Belgium 1554 (one bottle...I didn't want to buy a 6 pack just in case I didn't like this recipe...and the clerk told me the closest thing to 1554 is guiness. I agree with you...not recomended...too strong of a beer flavor (but my husband loved it!...he likes dark beer though) anyway would try this again with New Belgium 1554 (I'll break down and buy the 6 pack) I put fresh rosemary on top...yum!

ReplyDeleteI found this on Pinterest, and gave it a try - unfortunately, I checked on them at 25 minutes (fine) and turned them - then about 10 minutes later, smelled something awful. Yeah, they burnt to a crisp. I may try again sometime, but be aware you should check them more often.

OH MY GOODNESS were these delicious. I used Sam Adams Winter Lager beer and it worked fine. My husband went thru chemo and a stem cell transplant and it really messed up his taste (and it's been 3 years ago). When I asked him what he thought he replied "GOOD". When he says something is good it is just amazing!! THANK YOU for this recipe. Definitely a keeper.

ReplyDeleteI tried this tonight. Unfortunately my sinuses were a little stuffed so I couldn't appreciate the full flavor. My husband really liked the chops but both him and my kids said the sauce was too sweet. I think I will use less brown sugar next time. I liked it a lot and loved that it was soooooo easy!
ReplyDeleteEvery region has a dark beer that is more popular that will work fine. Dark beer has more flavor to add to the dish, if you don't have a full body dark beer I would use red wine.
ReplyDeleteI made these tonight and was so pleased with them!! I used New Belgium Fat Tire Amber Ale. I did use a bit of garlic powder and onion powder to add a little more flavor and for the thickening agent I used chicken broth in place of the water. These are fantastic, Will definitely make again!

ReplyDeleteBistrowoman - I cater and yes, you could do these in the oven. Just brown first, place in baking dish, cover with sauce and bake at 350 - allow for additional cooking time in the even that they take a little longer. I would uncover last 10-15 minutes to help sauce thicken a bit and of course, check them!! I have done these (for a senior citizen luncheon) with 1" thick boneless pork loin chops and used coke instead and they were a huge hit and SO tender. I also made faux-mashed potatoes (mashed cauliflower) as an alternative and the sauce complimented them perfectly.

DeleteThis is also my drunkin meatball recipe. I make the sauce in my slowcooker. Heat the sauce in slowcooker, then add raw meatballs. Cook on high for approx 4 hours then turn to low for final 2 hours. The best meatballs you will ever have.

ReplyDeleteSo I have been itching to try this recipe since I first saw it and I am being brave and trying it in the crock pot. I did use my meat tenderizer because the pork chops were very thick and i browned the pork chops but didn't cook them fully as they will be in my crock pot cooking. I also doubled the sauce, and put the sauce in the same pan I cooked the pork chops in to get that yummy flavor. Then I poured over the chops in the crock pot set the temp to low so it will cook now for 6-8 hours then I will strain my sauce and thicken it and make my homemade buttermilk mash potatoes i'm really looking forward to this I hope it works out I will be back to let you know.

I read all the reviews and everyone says its delicious, but what does the sauce taste like? Does it taste like BBQ sauce? I've never heard of the beers suggested. Can you name some more common dark beers? I would love to try this soon! Thanks! =)
ReplyDeleteI also found this one on Pinterest. Made it a couple weeks ago and Hubby devoured it! Used Angry Orchard Ginger Cider and it was wonderful! Loved the apple/pork combo. I have a question - I have a pork tenderloin out for dinner tonight. Do you think I could use it instead of the chops??

ReplyDeleteSoooo good! Just finished eating it, and my fiance said " I actually really liked it." Which rarely happens. I did two separate dishes: one beer, and one Pepsi. I used a can of bud light since he wouldn't let me waste a bottle of beer lol. Thank you!

DeleteI have made this several times. I love it. The only thing I do different is to add a TBSP of red wine vinegar to cut some of the sweetness to it. I love it and so does my family!!

ReplyDeleteWent to the store today for dark ale and pork chops. Came home with dark ale and chicken breasts! Getting old and senile. lol Made the recpe anyway with the chicken. My husband went totally nuts over it. He can't wait to try it with pork chops. This recipe is totally awesome. Thanks so much for sharing it.

Delicious! I added some cayenne pepper to give it a zing! Will cut back on sugar just a bit next time, and will try in crockpot!
ReplyDeleteI sauteed slivers of onion & green peppers in skillet with olive oil before adding pork chops. Also added ppred pepper flake to sauce. Would put over rice as it has a similar taste to sweet & sour sauce.

I just made this tonight. I didn't thicken the sauce enough, so next time I will. The only dark beer I had on hand was a darker Budweiser, I can't even remember what it was now as I'm half asleep and I don't drink the stuff to begin with, lol. My fiance is the beer drinker, not me, especially now being pregnant. It was pretty good, so I'll make it again.
ReplyDeleteI made this using Samuel Adams Boston Lager. YUMMY!!! I cut down on the brown sugar to 1/3 cup. Next time, I'll cut it down to 1/4 cup & cook up some chicken. Thanks for the recipe!
ReplyDeleteI made this last night with Shiner Bock and it was amazing! :) My whole family faved about it.. I made some mashed potatoes to go with it, and a bacon cheddar beer bread (also using Shiner) and my family was very impressed by the whole thing.. If you have Shiner Bock available in your area, I recommend trying it with that!:)

ReplyDeleteMaking these for the second time tonight. The first time I used Saint Arnold Spring Bock and it worked out beautifully. This time I went with Ziegenbock because the Saint Arnold was out season and so far so good. Both of these are Texas beers so I am not sure how widely available they are.
ReplyDeleteThe flavor is right on if you like a pretty sweet sauce. I had to lighten it up..so I added a little more beer and chicken broth, plus I added garlic powder, soy sauce and oregano. I would make it again, but definitely cut down on the brown sugar.
ReplyDeleteI made this for dinner tonight and found it to be WAY too sweet. I would be interested to hear if anyone has added any other spices? cut down on the sugar? I think it would be a good base for a pork roast but with some tweaks!I like the idea of adding garlic powder (though I would probably go with fresh garlic). Not sure I would so the soy sauce route though.

I made this tonight and it is definitely a keep my husband said! I followed directions to a T and used one can of regular budweiser..... Perfect!!!
ReplyDeleteThis is my favorite recipe! I also make it with boneless, skinless chicken and it is to die for! I use different types of Sam Adams beer to make it. I always double the sauce part. The family loves it!

ReplyDeleteMade these tonight, used Coors light (that's all I had).. The sauce was great the pork chops were not fork tender. I'd do it again in the crock pot.
ReplyDeleteI'm wanting to make a special meal for my boyfriend's 30th birthday. He absolutely loves pork chops, however he is not a beer drinker. I know the alcohol will cook out, but does it end up tasting like beer? If so he won't like it. I'm curious what those of you who have tried it and don't like beer have to say. Please let me know! ReplyDeleteI made this tonight...used a dark creamy beer and added onions & mushrooms. We really liked it, but it is kinda sweet. I also added cajun seasoning on my chops. Served it over egg noodles. I will also make it again, I think boneless pork chops and chicken breast will be just as tasty :)

ReplyDeleteOkay...I just made this in my cast iron skillets.... while I was taking the chops out of the pan to "thicken" the sauce, I thought....these are going to be tough. When I added the chops back into the sauce, I sliced them against the grain before hand. My family loved it! The would prefer it served over rice... so next time that is the plan. Thank you for the recipe! This would also be a hit with chicken, as mentioned above.
DeleteTried with Sam Adams blackberry witbier twice, once with ketchup and once with blackberry jam thinned with cider vinegar, we preferred option 2 but both were tasty!

ReplyDeleteSuper easy! Super yummy! I used coconut sugar instead of brown sugar. Also didn't need to thicken them. The sauce thickened up on its own. Thanks for sharing!

ReplyDeleteThis was my first time making this. And I am so glad I found this recipe (on pinterest) Otherwise I would have had to figure out how to get enough flavor with my chops. I followed as directed however when I simmered it did not heat up, art all.. So I did what another did and turn the heat up so it would go faster. I spent about an hour.. 20 minutes with high heat and 40 trying to simmer..
ReplyDeleteI used a light beer called rainer. All I had in the fridge..
I started to make this before I finished reading and discovered I had no cornstarch.. So, I used 3 tablespoons of flour to replace and it worked like a charm. It thickened up nicely. It wasn't that sweet, at least to me. It was perfect. `Not only was it nice on the chops but wonderful on the mashed potatoes I served it over. This will definitely be on my list. So good and besides spending more time than I wanted, it was really not that bad of a wait! Asparagus goes great as a side :)
