Loaded Chicken Philly Sammies

Chicken Philly Sammies PLUS Homemade Hoagie Rolls (or hamburger buns, or french rolls, or whatever shape you want to make them into roll)  PLUS a pretty please :)
First, the Loaded Chicken Philly Sammies. 
I adapted this fabulous recipe from my dear bloggy friend Jill Pickle, who adapted it from The Country Cook.  So, here is my version, loaded with EVERYTHING!

Ingredients:
  • 4 slices of thick sliced bacon, chopped into bite-sized pieces
  • 2 TBSP butter
  • 1 pound of boneless skinless chicken breast, diced into bite-sized pieces
  • 1/2 large sweet onion, diced
  • 1 bell pepper (your choice, green, yellow, or red....or a combo), sliced
  • 6 ounces white button mushrooms, sliced
  • 2 TBSP lemon pepper seasoning
  • 1/2 tsp kosher salt
  • 4 slices of provolone cheese
  • 4 hoagie rolls, recipe below.  Feel free to substitute whatever bun you or your bakery may have
  • REAL, good quality mayo.  I like Hellman's or Duke's best, but for gracious sake, do NOT use Miracle Whip!

Chunk up your chicken, toss into a bowl and season with lemon pepper and salt. Stir to coat all the pieces well.  Add the diced onion, sliced pepper and mushrooms to the chicken bowl.
In a skillet over medium-high heat, add your chopped bacon and cook for a few minutes until done. Scoop out and drain on a paper towel. Set aside. Leave the bacon grease in the pan. Add 2 tablespoons of butter to the bacon grease. Turn heat down to medium.
Toss in the chicken/veggies into the bacon/melted butter and cook for 8 minutes or so, stirring often to break up the pieces and evenly cook on all sides. Add in the bacon and stir. (taste now for additional salt or pepper if you need)
In the skillet, divide up the chicken mix into 4 portions and separate. Add a piece of provolone cheese to each portion and allow to melt over top. While cheese is melting, put mayo on both sides of your bun. Scoop your portion onto your buns and serve.

Now, onto these A-MAZING Hoagie Rolls!
It should be no surprise that Mel, from My Kitchen Cafe, is a favorite of mine.  This recipe for her French Bread Rolls morphs by shape into whatever I need it to be.  It truly is a fabulous sandwich roll.  I have used it as hamburger buns, hoagie rolls, and just as a sandwich roll.  You won't be disappointed....and I have to say, adding a freshly made roll to any sandwich really ups the flavor!

Ingredients:
  • 1 1/2 cups warm water (110 degrees F/45 degrees C)
  • 1 tablespoon active dry yeast
  • 2 tablespoons white sugar
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 4 cups all-purpose flour

In a large bowl, stir together warm water, yeast, and sugar. Let stand until creamy, about 10 minutes.
To the yeast mixture, add the oil, salt, and 2 cups flour. Stir in the remaining flour, 1/2 cup at a time, until the dough has pulled away from the sides of the bowl. Turn out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl, and turn to coat. Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour.
Deflate the dough, and turn it out onto a lightly floured surface. Divide the dough into 12-14 equal pieces, and form into round balls....or shape into whatever shape you need it to be.  Place on lightly greased baking sheets at least 2 inches apart. Cover the rolls with a damp cloth (or greased saran wrap), and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 400 degrees.
Bake for 12-13 minutes in the preheated oven, or until golden brown.  If you want the top crusty, spray some water into the oven a couple times in the first 5 minutes of baking.

If you are at all familiar with the blog-o-sphere, you have seen "linky parties", a place that other bloggers can link some things from their site they would like to share. However, I know there are SO many of my friends (yes, that is YOU) out there that are talented home cooks that do not have food blogs as a way to share their recipes. So, I wanted a way that YOU could share your Thanksgiving recipes with all of us as well. Not to mention, it totally is going to feed into my cookbook/recipe addiction since all of the boxes containing my "stash" are still tightly taped up in the garage....somewhere.

Crock Pot BBQ Country Ribs with Beer Braised Onions

The.  Move.  Is.  Over.
Thank goodness! 
We are still in the midst of unpacking, but at least the kitchen is mostly there.  There enough to make dinner, which is a good thing because if I have to eat any more take-out, fast food, or sitting to eat looking and feeling all nasty and sweaty in a restaurant again....well, let's just say it would not be pretty!
Last month, while in my "CLEAN IT OUT" phase of the packing process, I made this super yummy dish with some pork country ribs I had in the freezer.  It is super easy, simple, and DELISH!  I used to make this meal all the time, but hadn't in a while.  In fact, I think the last time I made it was for my Dadu while my Mom was out of town and he LOVED, LOVED, LOVED it!  For those that know about my Dadu, you know that for him to eat anything aside from steak, macaroni and cheese, or fried chicken was an incredibly rare thing.
Even though this has some prep work involved before you stick it in the Crock Pot, it is well worth it!

Ingredients:
  • 8-10 boneless country style pork ribs
  • salt and pepper to taste
  • 2 TBSP extra virgin olive oil
  • 1 bottle of your favorite bottled (or homemade) BBQ sauce, 18 ounces.   I use the original Bullseye.
  • 1 large red onion, peeled and sliced
  • 1 bottle of beer of your choice.  I used an Amber Ale.
Salt and pepper both sides of ribs to taste.
Heat a large skillet with olive oil over medium high heat.  Add ribs and allow to sear until caramelized and brown on both sides, working in batches.  Remove the ribs once seared and layer in crock pot, topping with BBQ sauce using the entire bottle.
Once all ribs are seared, add an additional TBSP of olive oil if necessary, and add onion slices.  Allow onions to cook until caramelized as well.  Very carefully, add beer to de-glaze pan, scraping up any brown bits from the bottom of the pan.  Turn down the heat to medium-low and allow to simmer until most of the liquid has cooked down by half or more, about 3-6 minutes.  Add onions to top of ribs and BBQ sauce.  Cover with lid and allow to cook on low heat for 6-7 hours. 
This is fabulous served over mashed potatoes!

Apple Stacks

I would normally be rejoicing with the masses about today being Friday.  However, today it is a bitter sweet statement.  T-minus-3 days until the move!  Today is the big, final push to get everything else packed.  My goal is to have Saturday and Sunday be dedicated to breaking down furniture and getting EVERYTHING downstairs and by the doors so Monday morning, it is simply a matter of loading the truck.  I have stayed on task following my list pretty good so far.  Did I mention that I am a Virgo??  Lists are my friends, lol!  However, today is the packing day I have been dreading....closets.  UGH!  We have a Harry Potter like closet under the stairs that has become the black hole for random crap that you have no idea what to do with.  Everything from our drum set for Guitar Hero World Tour, to the crystals we mined on our trip to Asheville, the "craft box", to my Dad's old trumpet.
Enough about moving!  I just felt the need to be a tad longer in my story since this "recipe" I am sharing today is silly short.
I saw this recipe on the Earth Fare website and thought it was insanely adorable.  Simple and a perfect afternoon snack.  If you aren't into the whole peanut butter and apple combo, you could always use caramel apple dip as well.  The toppings are completely versatile so use what ever you like!

Ingredients:
  • 2 different colored apples, cored and cut into 3/4" slices
  • fresh lemon juice
  • 1/3 cup peanut butter or almond butter
  • 2 tbsp of each topping: trail mix, raisins, banana slices, granola, cereal, etc.  I used raisins, chocolate Cheerios, and chocolate covered sunflower seeds 
  • Pretzel rod

Core the apples and cut into 3/4" slices and sprinkle with lemon juice. (The lemon juice will prevent the apples from turning brown).
Spread the peanut butter onto each slice, covering the white part.
After all slices are covered with peanut butter, take bottom slice and sprinkle with desired topping. Take the next apple slice and stack it on top. Make sure you are alternating apple colors. Sprinkle this slice with another topping. The idea is to create layers of apple slices with toppings in between so they stack on top of one another.
Once you stack all layers on top of one another, the stacked slices will create a whole apple, like when you started.
Take a small amount of peanut butter and fill the middle part where the stem used to be.
Insert pretzel rod into the middle hole. This will create your new "stem".
