Lemon Sparkle Cake

I have seen this recipe in a billion different places, under a billion different names.  There is a reason for that, it is THAT good.  It is so very moist with such a delightful lemon flavor, yet a total breeze to make thanks to the use of a boxed cake mix.  Yes, I love me some doctored up cake mix recipes! 

Lemon Sparkle Cake
  • 1 box lemon cake mix
  • 1 box 3.4 ounce box instant lemon flavored pudding mix
  • 1 1/2 cups 7-up, Sprite, Sierra Mist, or Squirt ***please see note***
  • 1 tsp lemon extract
  • 4 eggs
  • 3/4 cup vegetable oil

In a large bowl, mix all ingredients until smooth. Pour into greased and floured 10 inch bundt or fluted cake pan and bake at 325 degrees for about 45 to 50 minutes or until set. Let cool and remove from pan and place on a wire rack.
You can drizzle with lemon glaze. (2/3 cup confectioner’s sugar and 1 TBSP lemon juice mixed until smooth), sprinkle with powdered sugar, thin out some lemon curd and use that as a glaze, drizzle some Limoncello over it, or serve with whipped cream and berries.  The possibilities are endless!

***NOTE***
     For the love of all mighty, DO NOT use Diet Soda in cooking.  The chemicals in them are bad enough on their own but when exposed to heat, they do some really, really scary things.  Seriously people, Google it!  I always CRINGE when I see that someone shares a recipe with Diet Soda in it....an extra 80-100 calories divided between an entire dish/dessert is not going to make that much of a difference.  Ok, off my soap-box!

  3. And it has such a purdy name too...LOL. Love these kinds of cakes. They travel so well too so if you are going to potluck or picnic, they don't need to be kept cold and they are easy to carry with. Perfect!

  6. LOL! I have about 7 different versions of this cake in my recipe box! I think I first saw one similar in the Cake Doctor Book (you know before blogs), and then started seeing them around the blog-o-sphere everywhere.

  9. This is in the oven, my second one in 2 days (it's that good) I used squirt instead of sprite because I like to drink more than I like to drink sprite it so I figured I'd love to eat it too. I do. It's amazing. Thanks for this fantastic recipe.

  11. Siggy- This cake sounds and looks so yummy. I totally agree with you on the whole diet soda thing. Those fake chemicals are scary. I figure that if you're going to have something then might as well use the real thing. I'd love to add your delicious cake to my features for this coming Wednesday if that would be ok.   12. Siggy, I promise you I won't use diet soda when I make this fabulous looking cake (I love that you highly suggested to NOT use diet soda in this recipe....you are so darn cute!). There is something kinda fun about making a cake with soda - the batter gets all fizzy! I just made a Root Beer Float Bundt cake that I hope to post soon which used 2 cups of root beer.
